Fourth of July Cupcakes
Goodmorning, Friends! Here begins a journey of documenting my delightfully yummy treats, sweets, breads, and pastries that I make. To start off with, I hope you enjoy this recipe for Vanilla Cupcakes with a fourth of July theme. Though you could garnish them with any kind of theme you wish.
I found the following recipe for these vanilla cupcakes here with a few minor alterations of my own. Firstly, you'll notice that I used less water. Second, I switched the amount of baking powder to a tablespoon. As far as I know it's actually the same amount as three teaspoons, but I have seen so many recipes be determined to say three teaspoons instead of one tablespoon, so maybe there is a difference that I can't detect. I also switched the vegetable oil with butter.
Lastly, I didn't use her frosting, since I am not such a big fan of butter frosting. So, my frosting came from here instead. And for that recipe, you will notice that I used less sugar in my own and it turned out just fine.
2 cups (414g) sugar
1 tbsp baking powder
1 tsp salt
1 cup (240ml) milk
1/2 cup (120ml) butter
1 tbsp vanilla extract
2 large eggs
3/4 cup (240ml) water
2. Mix flour, sugar, baking powder, and salt in a large mixer bowl. Set aside.
3. Add the milk, butter, vanilla extract, and eggs to a medium sized bowl and mix.
4. Add the wet ingredients to the dry ingredients and beat until well combined.
5. Slowly add the water to the batter and mix on low speed until well combined.
6. Fill cupcake liners about halfway and bake for about 17 minutes, or until a toothpick comes out clean.
